Seafood Risotto
Ingredients
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 1/2 cups Arborio rice
  • 1/2 cup dry white wine
  • 4 cups chicken broth, heated to a simmer
  • 1/2 pound shrimp, peeled and deveined
  • 1/2 pound scallops, cut into bite-sized pieces
  • 1/4 cup grated Parmesan cheese

Steps
  1. Heat the olive oil in a large saucepan over medium heat.
  2. Add the onion and garlic and cook until softened.
  3. Stir in the rice and cook for 2 minutes.
  4. Add the white wine and stir until absorbed.
  5. Add 1 cup of hot broth to the pan and stir until absorbed.
  6. Continue adding broth one cup at a time, stirring until each cup is absorbed before adding the next.
  7. When all of the broth has been added and absorbed by the rice, stir in the shrimp and scallops.
  8. Cook for an additional 5 minutes or until shrimp are cooked through.
  9. Stir in Parmesan cheese before serving.
