Seafood Chowder
Ingredients
  • 1 lb of mixed seafood (shrimp, fish, calamari, mussels)
  • 2 tablespoons of butter
  • 1 cup of diced onions
  • 1 cup of diced celery
  • 2 cloves of minced garlic
  • 2 tablespoons of all-purpose flour
  • 3 cups of chicken broth
  • 1 cup of heavy cream
  • 1 teaspoon of dried thyme leaves

Steps
  1. In a large pot over medium heat, melt the butter and add the onions, celery and garlic. Cook for 5 minutes until vegetables are softened.
  2. Stir in the flour until combined and cook for 1 minute.
  3. Add the chicken broth and bring to a boil. Reduce heat to low and simmer for 10 minutes.
  4. Stir in the heavy cream and thyme leaves. Simmer for another 5 minutes.
  5. Add the seafood to the pot and simmer for 8-10 minutes until cooked through.
  6. Serve with crusty bread or crackers.
