Salmon Teriyaki
Ingredients
  • 1/2 cup soy sauce
  • 1/4 cup sake or dry white wine
  • 2 tablespoons sugar
  • 2 tablespoons mirin (sweet rice wine)
  • 1 pound salmon fillets

Steps
  1. In a small saucepan, combine soy sauce, sake, sugar, and mirin.
  2. Bring to a boil over medium heat and stir until the sugar is dissolved.
  3. Reduce heat to low and simmer for 5 minutes.
  4. Place salmon fillets in a shallow dish. Pour the teriyaki sauce over them and turn to coat.
  5. Marinate for 10 minutes at room temperature or up to 2 hours in the refrigerator.
  6. Preheat oven to 375 degrees F (190 degrees C).
  7. Place salmon in a baking dish. Pour remaining marinade over the top.
  8. Bake in preheated oven for 15 minutes, or until fish flakes easily with a fork.
  9. Serve hot with steamed rice.
