- 1/2 cup soy sauce
- 1/4 cup sake or dry white wine
- 2 tablespoons sugar
- 2 tablespoons mirin (sweet rice wine)
- 1 pound salmon fillets
- In a small saucepan, combine soy sauce, sake, sugar, and mirin.
- Bring to a boil over medium heat and stir until the sugar is dissolved.
- Reduce heat to low and simmer for 5 minutes.
- Place salmon fillets in a shallow dish. Pour the teriyaki sauce over them and turn to coat.
- Marinate for 10 minutes at room temperature or up to 2 hours in the refrigerator.
- Preheat oven to 375 degrees F (190 degrees C).
- Place salmon in a baking dish. Pour remaining marinade over the top.
- Bake in preheated oven for 15 minutes, or until fish flakes easily with a fork.
- Serve hot with steamed rice.
