Salmon Cakes
Ingredients
  • 1 lb. salmon fillet
  • 1/4 cup minced onion
  • 2 tablespoons minced parsley
  • 2 tablespoons Dijon mustard
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon ground black pepper
  • 2 tablespoons olive oil

Steps
  1. In a medium bowl, mix together the salmon, onion, parsley, mustard, garlic powder, and pepper.
  2. Form into 8 patties.
  3. Heat the olive oil in a large skillet over medium-high heat.
  4. Place the patties in the skillet and cook for 4 minutes per side or until golden brown and cooked through.
  5. Serve warm.
