Salmon Cakes with…
Ingredients
  • 1 lb. salmon fillet
  • 1/4 cup minced red onion
  • 1/4 cup minced celery
  • 1/4 cup minced red bell pepper
  • 2 cloves garlic, minced
  • 2 tablespoons chopped fresh parsley leaves
  • 2 tablespoons capers, rinsed and drained
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon freshly ground black pepper

Steps
  1. Preheat oven to 375 degrees F.
  2. In a medium bowl, combine all ingredients except salmon.
  3. Add salmon and mix until just combined.
  4. Form into 4 patties and place on a greased baking sheet.
  5. Bake for 15 minutes or until cooked through.
  6. Serve with Lemon Dill Sauce (see recipe below).
