Salmon Cakes with…
Ingredients
  • 2 boneless, skinless salmon fillets
  • 1/4 cup diced onion
  • 1/4 cup diced celery
  • 2 tablespoons minced fresh parsley
  • 2 tablespoons mayonnaise
  • 1 large egg, lightly beaten
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon Old Bay Seasoning
  • 1/4 teaspoon ground black pepper
  • 3 tablespoons canola oil, divided

Steps
  1. In a medium bowl, combine the salmon, onion, celery, parsley, mayonnaise, egg, garlic powder, Old Bay seasoning and black pepper.
  2. Form mixture into four patties.
  3. Heat 2 tablespoons of oil in a large skillet over medium-high heat. Add the patties and cook for 3 to 4 minutes per side or until golden brown.
  4. Remove from pan and set aside.
  5. In the same skillet heat remaining oil. Add onion and celery and cook for 2 minutes or until tender.
  6. Serve patties with avocado salsa.
