- 2 boneless, skinless salmon fillets
- 1/4 cup diced onion
- 1/4 cup diced celery
- 2 tablespoons minced fresh parsley
- 2 tablespoons mayonnaise
- 1 large egg, lightly beaten
- 1/4 teaspoon garlic powder
- 1/4 teaspoon Old Bay Seasoning
- 1/4 teaspoon ground black pepper
- 3 tablespoons canola oil, divided
- In a medium bowl, combine the salmon, onion, celery, parsley, mayonnaise, egg, garlic powder, Old Bay seasoning and black pepper.
- Form mixture into four patties.
- Heat 2 tablespoons of oil in a large skillet over medium-high heat. Add the patties and cook for 3 to 4 minutes per side or until golden brown.
- Remove from pan and set aside.
- In the same skillet heat remaining oil. Add onion and celery and cook for 2 minutes or until tender.
- Serve patties with avocado salsa.
