- 1 lb. salmon fillets
- 1/2 cup panko breadcrumbs
- 1/4 cup minced fresh parsley
- 2 tablespoons minced shallots
- 1 teaspoon Dijon mustard
- Salt and pepper to taste
- 2 tablespoons olive oil
- In a medium bowl, combine the salmon, breadcrumbs, parsley, shallots, mustard, salt and pepper. Mix until well combined.
- Form the mixture into 4 patties.
- Heat the olive oil in a large skillet over medium-high heat. Add the patties and cook for 4 minutes per side or until cooked through.
- Serve with avocado mayo.
