Ingredients
  • 1 lb. salmon fillets
  • 1/2 cup panko breadcrumbs
  • 1/4 cup minced fresh parsley
  • 2 tablespoons minced shallots
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Steps
  1. In a medium bowl, combine the salmon, breadcrumbs, parsley, shallots, mustard, salt and pepper. Mix until well combined.
  2. Form the mixture into 4 patties.
  3. Heat the olive oil in a large skillet over medium-high heat. Add the patties and cook for 4 minutes per side or until cooked through.
  4. Serve with avocado mayo.
