Ingredients
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 onion, diced
  • 1 red bell pepper, diced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon ground cumin
  • ½ teaspoon crushed red pepper flakes (optional)
  • 2 cups cooked black beans (or 1 15 oz can drained and rinsed)
  • 2 cups cooked white rice (or 1 15 oz can drained and rinsed)
  • 1 cup frozen corn kernels

Steps
  1. Heat the olive oil in a large skillet over medium heat. Add the garlic, onion, and bell pepper. Cook for 5 minutes or until the vegetables are softened.
  2. Add the oregano, thyme, cumin and red pepper flakes. Cook for 1 minute.
  3. Add the black beans, white rice and corn kernels. Cook for 5 minutes or until everything is heated through.
  4. Serve warm with your favorite toppings.
