Saag Paneer
Ingredients
  • 1 tablespoon olive oil
  • 1 teaspoon cumin seeds
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon grated ginger root
  • 2 tomatoes, chopped
  • 2 teaspoons garam masala
  • 2 cups spinach leaves, chopped
  • 1/4 cup heavy cream or coconut milk (optional)
  • 1/2 teaspoon salt, or to taste
  • 10 ounces paneer cheese, cut into cubes

Steps
  1. Heat the oil in a large skillet over medium heat.
  2. Add the cumin seeds and fry for about 30 seconds.
  3. Add the onion and cook until softened, about 3 minutes.
  4. Stir in the garlic and ginger and cook for another minute.
  5. Stir in the tomatoes and garam masala. Cook for 5 minutes more.
  6. Stir in the spinach leaves and cook until wilted. Add the cream or coconut milk if desired.
  7. Season with salt to taste. Add the paneer cubes and stir gently to combine. Cook for about 5 minutes more.
  8. Serve hot.
