S'mores Cupcakes
Ingredients
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup (1 stick) butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2/3 cup whole milk

Steps
  1. Preheat oven to 350°F. Line 12-cup muffin tin with paper liners.
  2. In a medium bowl, whisk together flour, baking powder and salt. Set aside.
  3. In a large bowl, beat together butter and sugar until light and fluffy.
  4. Beat in eggs one at a time until combined. Beat in vanilla extract.
  5. Add half of the dry ingredients to butter mixture and beat until just combined. Beat in milk.
  6. Add remaining dry ingredients and mix until just combined. Do not overmix.
  7. Divide batter evenly among prepared muffin cups, filling each about two-thirds full.
  8. Bake 18 to 20 minutes or until golden brown and a toothpick inserted into the center comes out clean.
  9. Cool in pan for 5 minutes before transferring to a wire rack to cool completely.
