- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- 2 carrots, peeled and chopped
- 1 zucchini, chopped
- 1 yellow squash, chopped
- Preheat oven to 400°F.
- In a large bowl, combine olive oil, onion, garlic and vegetables.
- Toss to coat.
- Spread vegetables in a single layer on a baking sheet.
- Roast for 25 minutes or until vegetables are tender.
- Serve warm.
