Roasted Vegetables
Ingredients
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 2 carrots, peeled and chopped
  • 1 zucchini, chopped
  • 1 yellow squash, chopped

Steps
  1. Preheat oven to 400°F.
  2. In a large bowl, combine olive oil, onion, garlic and vegetables.
  3. Toss to coat.
  4. Spread vegetables in a single layer on a baking sheet.
  5. Roast for 25 minutes or until vegetables are tender.
  6. Serve warm.
