- 1 cup quinoa
- 2 tablespoons olive oil
- 1/2 onion, diced
- 1 red bell pepper, diced
- 1 zucchini, diced
- 1/4 teaspoon garlic powder
- salt and pepper to taste
- Preheat oven to 375°F. Grease a baking sheet with 1 tablespoon of the olive oil.
- In a medium-sized bowl, toss together quinoa, onion, bell pepper, zucchini and garlic powder.
- Spread the mixture onto the baking sheet. Drizzle with remaining olive oil and sprinkle with salt and pepper.
- Bake for 25 minutes or until vegetables are tender.
- Serve hot.
