Ingredients
  • 1 cup quinoa
  • 2 tablespoons olive oil
  • 1/2 onion, diced
  • 1 red bell pepper, diced
  • 1 zucchini, diced
  • 1/4 teaspoon garlic powder
  • salt and pepper to taste

Steps
  1. Preheat oven to 375°F. Grease a baking sheet with 1 tablespoon of the olive oil.
  2. In a medium-sized bowl, toss together quinoa, onion, bell pepper, zucchini and garlic powder.
  3. Spread the mixture onto the baking sheet. Drizzle with remaining olive oil and sprinkle with salt and pepper.
  4. Bake for 25 minutes or until vegetables are tender.
  5. Serve hot.
