Ingredients
  • 2 sweet potatoes, peeled and cubed
  • 2 red onions, quartered
  • 1 red bell pepper, cut into strips
  • 1 green bell pepper, cut into strips
  • 3 cloves garlic, minced
  • 3 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt

Steps
  1. Preheat oven to 400 degrees F (200 degrees C).
  2. In a large bowl, combine sweet potatoes, onions and peppers.
  3. Add garlic, olive oil, oregano and salt; toss to coat.
  4. Spread vegetables in a single layer on a baking sheet.
  5. Bake in preheated oven for 30 minutes or until vegetables are tender.
  6. Serve warm.
