- 2 sweet potatoes, peeled and cubed
- 2 red onions, quartered
- 1 red bell pepper, cut into strips
- 1 green bell pepper, cut into strips
- 3 cloves garlic, minced
- 3 tablespoons olive oil
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- Preheat oven to 400 degrees F (200 degrees C).
- In a large bowl, combine sweet potatoes, onions and peppers.
- Add garlic, olive oil, oregano and salt; toss to coat.
- Spread vegetables in a single layer on a baking sheet.
- Bake in preheated oven for 30 minutes or until vegetables are tender.
- Serve warm.
