- 2 large sweet potatoes, peeled and cut into 1/2-inch cubes
- 1 tablespoon olive oil
- 1 teaspoon chili powder
- 1/2 teaspoon garlic powder
- 1/4 teaspoon ground cumin
- 1/4 teaspoon salt
- 2 tablespoons lime juice
- 2 tablespoons chopped fresh cilantro
- Preheat oven to 400°F. Line a baking sheet with parchment paper.
- In a large bowl, combine sweet potatoes, olive oil, chili powder, garlic powder, cumin and salt. Toss until evenly coated.
- Spread the sweet potatoes in an even layer on the prepared baking sheet.
- Bake for 30 minutes or until golden brown and tender.
- In a small bowl, whisk together lime juice and cilantro.
- Drizzle over roasted sweet potatoes and serve immediately.
