Roasted Sweet Pot…
Ingredients
  • 1 large sweet potato, peeled and cubed
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1/4 cup chopped fresh parsley
  • 2 tablespoons freshly squeezed lemon juice
  • 2 tablespoons red wine vinegar
  • 1/4 cup crumbled feta cheese (optional)

Steps
  1. Preheat oven to 400°F. Line a baking sheet with parchment paper.
  2. In a large bowl, combine sweet potato cubes, olive oil, smoked paprika, salt and pepper. Toss to coat.
  3. Spread the sweet potatoes on the prepared baking sheet. Roast in preheated oven for 20-25 minutes or until tender.
  4. In a large bowl, combine roasted sweet potatoes, parsley, lemon juice and red wine vinegar. Toss to combine.
  5. Sprinkle with feta cheese (if using) and serve.
