Roasted Red Potat…
Ingredients
  • 3 pounds red potatoes
  • 1/4 cup olive oil
  • 2 teaspoons dried oregano
  • 2 teaspoons kosher salt

Steps
  1. Preheat oven to 400°F.
  2. Cut potatoes into 1-inch cubes and place in a large bowl.
  3. Drizzle with olive oil and sprinkle with oregano and salt.
  4. Toss potatoes until evenly coated.
  5. Spread potatoes on a baking sheet in an even layer.
  6. Roast for 25-30 minutes, or until golden brown and tender when pierced with a fork.
  7. Enjoy!
