Roasted Red Peppeā€¦
Ingredients
  • 2 red bell peppers
  • 1/4 cup olive oil
  • 1/2 cup walnuts
  • 2 cloves garlic, minced
  • 1/4 teaspoon salt
  • 3 tablespoons lemon juice
  • 1/4 cup fresh parsley, chopped

Steps
  1. Preheat oven to 375 degrees Fahrenheit.
  2. Cut bell peppers into quarters and remove the seeds.
  3. Place bell pepper pieces on a baking sheet lined with parchment paper.
  4. Drizzle olive oil over the peppers and roast in preheated oven for 20 minutes or until they are tender.
  5. In a food processor, add walnuts, garlic, salt, lemon juice, and parsley. Blend until a paste forms.
  6. Add roasted red peppers to the food processor and blend until combined.
  7. Cook pasta according to package instructions in salted water.
  8. Drain pasta and toss with pesto sauce. Serve immediately.
