Roasted Red Peppeā€¦
Ingredients
  • 1 can (15 ounces) chickpeas, drained and rinsed
  • 1/4 cup tahini
  • 2 cloves garlic, minced
  • 1/4 cup freshly squeezed lemon juice
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 3 tablespoons olive oil, plus more for serving
  • 1 roasted red pepper, diced

Steps
  1. In a food processor or blender, combine the chickpeas, tahini, garlic, lemon juice, cumin and salt. Blend until smooth.
  2. Add the olive oil and roasted red pepper and blend until combined.
  3. Serve with a drizzle of olive oil on top.
  4. Enjoy!
