Ingredients
  • 2 red bell peppers
  • 2 cloves garlic, minced
  • 1 (15-ounce) can chickpeas, drained and rinsed
  • 1/4 cup tahini
  • 3 tablespoons freshly squeezed lemon juice
  • 3 tablespoons extra-virgin olive oil
  • 1 teaspoon ground cumin
  • 1/2 teaspoon salt

Steps
  1. 1. Preheat oven to 400°F. Line a baking sheet with parchment paper.
  2. 2. Place the bell peppers on the prepared baking sheet and roast for 25 minutes, or until the skins are charred.
  3. 3. Remove from oven and place in a bowl. Cover with plastic wrap and let cool for 10 minutes.
  4. 4. Peel off the skins of the roasted peppers and discard.
  5. 5. Place the roasted peppers, garlic, chickpeas, tahini, lemon juice, olive oil, cumin, and salt in a food processor or blender. Blend until smooth.
  6. 6. Serve with pita chips or fresh vegetables.
