- 4 potatoes, diced
- 1 onion, diced
- 1/2 lb mushrooms, sliced
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- salt and pepper to taste
- Preheat oven to 375°F (190°C). Grease a baking sheet.
- In a large bowl, mix potatoes, onion, mushrooms, garlic and olive oil.
- Spread the mixture onto the prepared baking sheet.
- Bake in preheated oven for 30 minutes or until potatoes are cooked through.
- Season with salt and pepper to taste before serving.
