Ingredients
  • 1 head of garlic
  • 1/4 cup olive oil
  • 2 pounds russet potatoes, peeled and cubed
  • 1/2 cup milk
  • 4 tablespoons butter
  • Salt and pepper to taste

Steps
  1. Preheat oven to 400 degrees F (200 degrees C).
  2. Cut the top off the head of garlic, exposing the cloves.
  3. Drizzle 1/4 cup olive oil over the exposed cloves.
  4. Wrap in aluminum foil and roast in preheated oven for 40 minutes.
  5. Bring a large pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 15 minutes; drain.
  6. In a small saucepan heat milk and butter until butter is melted. Using a potato masher or electric mixer, mash potatoes until smooth. Stir in warm milk and butter mixture. Mash in roasted garlic cloves.
  7. Season with salt and pepper to taste.
