Ingredients
  • 1 head of garlic
  • 2 tablespoons olive oil
  • 2 cans of chickpeas, drained and rinsed
  • 3 tablespoons tahini
  • 2 tablespoons lemon juice
  • 1/4 teaspoon cumin
  • salt and pepper to taste

Steps
  1. Preheat oven to 375°F. Cut the top off the garlic head, exposing the cloves. Drizzle with olive oil, wrap in foil and roast for 30 minutes. Let cool.
  2. In a food processor, combine the roasted garlic cloves, chickpeas, tahini, lemon juice, cumin, salt and pepper. Process until smooth.
  3. Transfer to a bowl and serve with pita chips or vegetables.
