- 1 large eggplant
- 1/2 cup crumbled feta cheese
- 2 tablespoons olive oil
- 1/4 teaspoon salt
- Preheat oven to 375°F. Line a baking sheet with parchment paper.
- Cut the eggplant into 1/2-inch thick slices and place on the prepared baking sheet. Drizzle with olive oil and sprinkle with salt.
- Bake for 15 minutes, then flip the eggplant slices over and bake for an additional 10 minutes.
- Sprinkle feta cheese over the eggplant slices and bake for an additional 5 minutes.
- Serve warm.
