Roasted Eggplant …
Ingredients
  • 1 large eggplant
  • 1/2 cup crumbled feta cheese
  • 2 tablespoons olive oil
  • 1/4 teaspoon salt

Steps
  1. Preheat oven to 375°F. Line a baking sheet with parchment paper.
  2. Cut the eggplant into 1/2-inch thick slices and place on the prepared baking sheet. Drizzle with olive oil and sprinkle with salt.
  3. Bake for 15 minutes, then flip the eggplant slices over and bake for an additional 10 minutes.
  4. Sprinkle feta cheese over the eggplant slices and bake for an additional 5 minutes.
  5. Serve warm.
