- Preheat oven to 375°F. Line a baking sheet with parchment paper.
- In a large bowl, combine carrots, olive oil, thyme, paprika, salt, and pepper. Toss to combine.
- Spread carrots in an even layer on the prepared baking sheet.
- Bake for 25 minutes or until tender.
- In a small bowl, whisk together honey and mustard. Drizzle over the cooked carrots and toss to coat.
- Return the carrots to the oven and bake for an additional 5 minutes.
