Ingredients
  • 2 lbs carrots, peeled and cut into 3-inch pieces
  • 3 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons honey
  • 2 tablespoons Dijon mustard

Steps
  1. Preheat oven to 375°F. Line a baking sheet with parchment paper.
  2. In a large bowl, combine carrots, olive oil, thyme, paprika, salt, and pepper. Toss to combine.
  3. Spread carrots in an even layer on the prepared baking sheet.
  4. Bake for 25 minutes or until tender.
  5. In a small bowl, whisk together honey and mustard. Drizzle over the cooked carrots and toss to coat.
  6. Return the carrots to the oven and bake for an additional 5 minutes.
  7. Serve warm.
