Roasted Carrots
Ingredients
  • 2 lbs carrots, peeled and cut into 2-inch pieces
  • 2 tablespoons olive oil
  • 1 teaspoon ground cumin
  • 1/2 teaspoon salt

Steps
  1. Preheat oven to 375°F.
  2. In a large bowl, combine carrots, olive oil, cumin, and salt.
  3. Spread the carrots out on a baking sheet lined with parchment paper.
  4. Bake in preheated oven for 25-30 minutes or until carrots are tender and lightly browned.
  5. Serve warm.
