Ingredients
  • 1 large butternut squash, peeled and cubed
  • 3 tablespoons extra virgin olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon dried rosemary
  • ¼ teaspoon black pepper
  • 2 tablespoons honey
  • 2 tablespoons balsamic vinegar

Steps
  1. Preheat oven to 400°F (200°C). Place the cubed squash on a baking sheet. Drizzle with olive oil and sprinkle with garlic, rosemary, and black pepper.
  2. Bake for about 30 minutes or until the squash is tender. Remove from oven and drizzle with honey and balsamic vinegar.
  3. Toss to coat and return to oven for 10 more minutes.
  4. Serve warm.
