Ingredients
  • 2 red bell peppers
  • 1 small onion
  • 3 cloves garlic
  • 1/4 cup mayonnaise
  • 2 tablespoons sour cream
  • 1 teaspoon Dijon mustard
  • 1/4 teaspoon smoked paprika

Steps
  1. Preheat oven to 400°F.
  2. Cut bell peppers in half and remove seeds and membranes. Place cut side down on a baking sheet lined with foil.
  3. Cut onion into quarters and place on baking sheet.
  4. Bake for 25 minutes or until vegetables are tender.
  5. Remove from oven and let cool.
  6. Once cool, peel the skin off the bell peppers, discarding it.
  7. Place bell pepper, onion, garlic, mayonnaise, sour cream, mustard and smoked paprika in a food processor. Process until smooth.
  8. Serve with pita chips or fresh vegetables.
