- 2 red bell peppers
- 1 small onion
- 3 cloves garlic
- 1/4 cup mayonnaise
- 2 tablespoons sour cream
- 1 teaspoon Dijon mustard
- 1/4 teaspoon smoked paprika
- Preheat oven to 400°F.
- Cut bell peppers in half and remove seeds and membranes. Place cut side down on a baking sheet lined with foil.
- Cut onion into quarters and place on baking sheet.
- Bake for 25 minutes or until vegetables are tender.
- Remove from oven and let cool.
- Once cool, peel the skin off the bell peppers, discarding it.
- Place bell pepper, onion, garlic, mayonnaise, sour cream, mustard and smoked paprika in a food processor. Process until smooth.
- Serve with pita chips or fresh vegetables.
