Roasted Asparagus…
Ingredients
  • 1 lb. asparagus, trimmed
  • 2 tablespoons olive oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons grated Parmesan cheese
  • 2 teaspoons lemon zest

Steps
  1. Preheat oven to 425°F.
  2. Toss asparagus with olive oil, salt and pepper in a large bowl.
  3. Spread the asparagus on a baking sheet in an even layer.
  4. Roast in preheated oven for 12 minutes.
  5. Sprinkle with Parmesan cheese and lemon zest.
  6. Serve warm.
