- 2 kg lamb
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1 teaspoon ground cumin
- 1/2 teaspoon ground cinnamon
- Salt and freshly ground pepper to taste
- Preheat oven to 350F (175C).
- In a small bowl, mix together garlic, oregano, thyme, cumin, cinnamon, salt and pepper.
- Rub the mixture all over the lamb.
- Place the lamb in a roasting pan and roast for about 1 hour or until internal temperature reaches 145F (63C).
- Let the meat rest for 10 minutes before slicing.
- Serve with desired accompaniments.
