Roast Lamb
Ingredients
  • 2 kg lamb
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground cinnamon
  • Salt and freshly ground pepper to taste

Steps
  1. Preheat oven to 350F (175C).
  2. In a small bowl, mix together garlic, oregano, thyme, cumin, cinnamon, salt and pepper.
  3. Rub the mixture all over the lamb.
  4. Place the lamb in a roasting pan and roast for about 1 hour or until internal temperature reaches 145F (63C).
  5. Let the meat rest for 10 minutes before slicing.
  6. Serve with desired accompaniments.
