Roast Beef
Ingredients
  • 2-3 lb. beef roast
  • 1/4 cup olive oil
  • 1/4 cup balsamic vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Steps
  1. Preheat oven to 350°F.
  2. In a small bowl, mix together olive oil, balsamic vinegar, garlic, oregano, thyme, salt and pepper.
  3. Rub the mixture over the roast.
  4. Place the roast in a roasting pan and cook for 1 1/2 to 2 hours or until the internal temperature reaches 145°F.
  5. Let rest for 10 minutes before slicing.
  6. Serve with your favorite sides.
