- 2-3 lb. beef roast
- 1/4 cup olive oil
- 1/4 cup balsamic vinegar
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Preheat oven to 350°F.
- In a small bowl, mix together olive oil, balsamic vinegar, garlic, oregano, thyme, salt and pepper.
- Rub the mixture over the roast.
- Place the roast in a roasting pan and cook for 1 1/2 to 2 hours or until the internal temperature reaches 145°F.
- Let rest for 10 minutes before slicing.
- Serve with your favorite sides.
