- 1/2 cup ricotta cheese
- 2 tablespoons chopped fresh basil
- 2 tablespoons extra-virgin olive oil
- 1/4 teaspoon freshly ground black pepper
- 4 slices crusty Italian bread
- 1 plum tomato, sliced
- Mix together ricotta, basil, olive oil and pepper in a small bowl.
- Toast the bread slices.
- Spread the ricotta mixture on each slice of toasted bread.
- Top with tomato slices.
