Rice Pilaf (Vegan)
Ingredients
  • 1 tablespoon olive oil
  • 1/2 cup diced onion
  • 2 cloves garlic, minced
  • 1 cup long grain white rice
  • 1/4 teaspoon ground turmeric
  • 2 1/4 cups vegetable broth or water
  • 3/4 teaspoon salt

Steps
  1. Heat the oil in a medium saucepan over medium heat. Add the onion and garlic, and cook until the onion is softened, about 5 minutes.
  2. Add the rice and turmeric, and stir to combine. Pour in the broth or water, add the salt, and bring to a boil.
  3. Reduce heat to low, cover, and simmer for 20 minutes.
  4. Remove from heat and let sit for 10 minutes before fluffing with a fork.
  5. Serve warm.
