Ingredients
  • 1/2 cup butter
  • 1/2 cup white sugar
  • 1/4 cup all-purpose flour
  • 3 eggs
  • 1 teaspoon vanilla extract
  • 2 cups cooked and mashed rhubarb
  • 1 unbaked 9 inch pie crust

Steps
  1. Preheat oven to 350 degrees F (175 degrees C). In a medium bowl, cream together butter and sugar until light and fluffy. Beat in flour, eggs and vanilla. Stir in rhubarb. Pour into pie shell.
  2. Bake at 350 degrees F (175 degrees C) for 40 to 50 minutes, or until golden brown.
  3. Cool before serving.
