Refried Beans
Ingredients
  • 1 lb. pinto beans
  • 1/4 cup vegetable oil
  • 1/2 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste

Steps
  1. Soak the beans overnight in a large bowl of water.
  2. Drain the beans and rinse them with cold water.
  3. Heat the oil in a large pot over medium heat.
  4. Add the onion and garlic and cook until softened, about 5 minutes.
  5. Add the cumin and chili powder and cook for 1 minute more.
  6. Add the beans to the pot and stir to combine.
  7. Cover with 2 inches of water and bring to a boil.
  8. Reduce heat to low, cover, and simmer for 1 hour or until beans are tender.
  9. Remove from heat and mash with a potato masher or fork until desired consistency is reached.
  10. Season with salt and pepper to taste.
