- 1/2 cup cooked quinoa
- 1/2 cup cooked black beans
- 1/2 cup grated carrots
- 1/4 cup diced red onion
- 1/4 cup chopped fresh parsley
- 3 tablespoons all-purpose flour
- 1 teaspoon cumin
- Salt and pepper to taste
- In a large bowl, combine the quinoa, black beans, carrots, onion, parsley, flour, cumin, salt and pepper.
- Form the mixture into four patties.
- Heat a skillet over medium heat and coat with cooking spray.
- Cook the patties for 3 minutes on each side or until golden brown.
- Serve hot.
