Quinoa Veggie Bur…
Ingredients
  • 1/2 cup cooked quinoa
  • 1/2 cup cooked black beans
  • 1/2 cup grated carrots
  • 1/4 cup diced red onion
  • 1/4 cup chopped fresh parsley
  • 3 tablespoons all-purpose flour
  • 1 teaspoon cumin
  • Salt and pepper to taste

Steps
  1. In a large bowl, combine the quinoa, black beans, carrots, onion, parsley, flour, cumin, salt and pepper.
  2. Form the mixture into four patties.
  3. Heat a skillet over medium heat and coat with cooking spray.
  4. Cook the patties for 3 minutes on each side or until golden brown.
  5. Serve hot.
