Quinoa Stuffed To…
Ingredients
  • 2 cups cooked quinoa
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup chopped fresh parsley
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 3 tablespoons lemon juice
  • 1/4 teaspoon dried oregano
  • Salt and ground black pepper to taste
  • 6 large tomatoes, halved

Steps
  1. Preheat oven to 350 degrees F (175 degrees C).
  2. In a bowl, combine quinoa, feta cheese, parsley, olive oil, garlic, lemon juice and oregano. Season with salt and pepper.
  3. Spoon quinoa mixture into the tomato halves. Place in a baking dish.
  4. Bake in preheated oven for 20 minutes or until tomatoes are tender.
