Ingredients
  • 1 cup quinoa
  • 2 bell peppers
  • 1/4 cup diced onion
  • 1/4 cup diced celery
  • 1/4 cup diced carrots
  • 1/2 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Steps
  1. Preheat oven to 375°F.
  2. Cut the bell peppers in half and remove the seeds.
  3. In a medium saucepan, cook quinoa according to package instructions.
  4. In a large skillet, heat oil over medium heat. Add onion, celery, carrots, garlic powder, Italian seasoning, salt and pepper. Cook until vegetables are tender.
  5. Stir in cooked quinoa and mix until combined.
  6. Fill each bell pepper half with quinoa mixture.
  7. Bake for 25 minutes or until peppers are tender.
  8. Serve warm.
