Ingredients
  • 1 cup quinoa
  • 1 tablespoon olive oil
  • 2 cups assorted vegetables (e.g., peppers, mushrooms, onions, etc.)
  • 1/4 cup freshly chopped herbs (e.g., parsley, cilantro, dill, etc.)
  • Salt and pepper to taste

Steps
  1. Preheat oven to 400°F.
  2. In a medium bowl, combine the quinoa and olive oil.
  3. Spread the quinoa mixture onto a baking sheet lined with parchment paper.
  4. Add the vegetables to the baking sheet and toss everything together until it is evenly coated in olive oil.
  5. Roast for 20-25 minutes or until the vegetables are tender and lightly browned.
  6. Transfer the roasted vegetables and quinoa to a large bowl.
  7. Add the herbs and season with salt and pepper to taste.
  8. Serve warm or chilled.
