Ingredients
  • 1 cup quinoa
  • 1/4 cup olive oil
  • 1/4 cup freshly squeezed lime juice
  • 1 teaspoon honey
  • 1/2 teaspoon ground cumin
  • Salt and pepper to taste
  • 2 avocados, diced
  • 2 mangoes, diced

Steps
  1. Cook the quinoa according to package instructions.
  2. In a small bowl, whisk together the olive oil, lime juice, honey and cumin.
  3. Season with salt and pepper, to taste.
  4. In a large bowl, combine the cooked quinoa, avocados and mangoes.
  5. Pour the dressing over the salad and toss to combine.
  6. Serve immediately or refrigerate until ready to serve.
