Quinoa Burrito Bo…
Ingredients
  • 1 cup quinoa
  • 1 can black beans, drained and rinsed
  • 1 red bell pepper, diced
  • 1/2 cup corn kernels
  • 1/4 cup diced red onion
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste

Steps
  1. In a medium saucepan, bring 2 cups of water to a boil. Add the quinoa and reduce heat to low. Simmer for 15 minutes or until all the water is absorbed. Fluff with a fork.
  2. In a large skillet over medium heat, heat the olive oil. Add the garlic, bell pepper, onion and corn. Cook for 5 minutes or until vegetables are tender.
  3. Add the black beans, chili powder, cumin and salt and pepper. Cook for an additional 5 minutes.
  4. Divide the quinoa among 4 bowls and top with the vegetable mixture.
  5. Serve warm.
