- 1 cup quinoa
- 1/2 cup diced tomatoes
- 1/4 cup diced red onion
- 1/4 cup chopped fresh cilantro
- 1 tablespoon olive oil
- Rinse the quinoa in a fine mesh strainer.
- In a medium saucepan, bring 1 1/2 cups of water to a boil.
- Add the quinoa and reduce heat to low. Simmer for 15 minutes.
- Stir in the tomatoes, onion, cilantro and olive oil. Cook for an additional 5 minutes.
- Serve warm.
