Quinoa Bowl
Ingredients
  • 1 cup quinoa
  • 1/2 cup diced tomatoes
  • 1/4 cup diced red onion
  • 1/4 cup chopped fresh cilantro
  • 1 tablespoon olive oil

Steps
  1. Rinse the quinoa in a fine mesh strainer.
  2. In a medium saucepan, bring 1 1/2 cups of water to a boil.
  3. Add the quinoa and reduce heat to low. Simmer for 15 minutes.
  4. Stir in the tomatoes, onion, cilantro and olive oil. Cook for an additional 5 minutes.
  5. Serve warm.
