- 1 cup quinoa
- 2 tablespoons olive oil
- 1/2 onion, diced
- 4 cups mushrooms, sliced
- 4 cups spinach leaves, roughly chopped
- 1/4 teaspoon garlic powder
- Salt and pepper to taste
- Rinse quinoa in a fine mesh strainer and set aside.
- Heat olive oil in a large skillet over medium heat. Add diced onion and cook until softened.
- Add mushrooms and cook until they are softened and lightly browned.
- Add spinach leaves and garlic powder. Cook until the spinach is wilted.
- Add the rinsed quinoa to the skillet. Season with salt and pepper to taste.
- Stir everything together until combined. Cook for an additional 2-3 minutes or until the quinoa is cooked through.
- Serve hot.
