Ingredients
  • 1 cup quinoa
  • 2 tablespoons olive oil
  • 1/2 onion, diced
  • 4 cups mushrooms, sliced
  • 4 cups spinach leaves, roughly chopped
  • 1/4 teaspoon garlic powder
  • Salt and pepper to taste

Steps
  1. Rinse quinoa in a fine mesh strainer and set aside.
  2. Heat olive oil in a large skillet over medium heat. Add diced onion and cook until softened.
  3. Add mushrooms and cook until they are softened and lightly browned.
  4. Add spinach leaves and garlic powder. Cook until the spinach is wilted.
  5. Add the rinsed quinoa to the skillet. Season with salt and pepper to taste.
  6. Stir everything together until combined. Cook for an additional 2-3 minutes or until the quinoa is cooked through.
  7. Serve hot.
